Recipe Tips

When cooking the egg noodles, make sure to follow the package instructions closely. Overcooking them can lead to a mushy texture, which is not ideal for the final dish. Aim for al dente, as they will continue to cook slightly when mixed with the creamy sauce.
For a richer flavor, consider infusing the milk with the cinnamon stick and lemon peel by simmering them together for about 10 minutes before adding the egg yolks and sugar. This step enhances the aromatic qualities of the dish and prevents any raw egg taste.
Avoid adding the sugar all at once to the milk mixture. Instead, gradually incorporate it while whisking the egg yolks to create a smooth custard-like consistency. This helps prevent the eggs from curdling and ensures a creamy texture in your final dish.

Frequently Asked Questions

Can I substitute whole milk with a non-dairy alternative?

Yes, you can substitute whole milk with non-dairy alternatives such as almond milk, coconut milk, or oat milk. However, keep in mind that it may alter the flavor and texture slightly, so choose a creamy option for the best results.

How should I store leftover Aletria and how long does it last?

Store leftover Aletria in an airtight container in the refrigerator for up to 5 days. Make sure it is cooled completely before covering it, to avoid condensation that can make it soggy.

What can I do if my Aletria is too sweet or too thick?

If your Aletria is too sweet, you can balance it out by adding a little more milk to dilute the sweetness. If it is too thick, you can also add a bit of milk while gently reheating it until you reach your desired consistency.

This is my first try at making Portuguese noodle pudding. I tried it years ago when a coworker brought it inso good!! Turned out great even though I added the yolks into the milk right off the bat. I managed to fish out 5 out of the 6 and still turned out great!!
