Recipe Tips

For a crispier crust, pre-bake the thin pizza dough for about 5 minutes at 475°F (245°C) before adding toppings. This helps prevent a soggy base when the sauce is added.
When sautéing the mushrooms, add a pinch of salt to draw out moisture and enhance their flavor. Sauté them until they are golden brown and have released most of their liquid before adding them to the pizza.
Avoid using too much tomato paste, as it can make the pizza overly dense and soggy. Stick to the recommended 2 tablespoons, and consider mixing it with a teaspoon of water for easier spreading if it seems too thick.

Frequently Asked Questions

Can I use a different type of cheese instead of mozzarella?

Yes, you can substitute mozzarella with other cheeses like gouda, fontina, or provolone for a different flavor. Keep in mind that these cheeses may melt differently, so adjust the baking time if needed.

How should I store leftover pizza?

Leftover pizza should be stored in an airtight container in the refrigerator for up to 3-4 days. You can also freeze it for longer storage, just wrap it tightly in plastic wrap and then in aluminum foil.

What can I use in place of tomato paste if I run out?

If you don't have tomato paste, you can use tomato sauce or crushed tomatoes. Just be aware that they will add more moisture to your pizza, so you may want to cook the sauce down a bit before using it.

Recommended Drink Pairings

Wine

Portuguese: Vinho Verde - This light and refreshing wine complements the savory flavors of the chicken and mushrooms perfectly.

General: Pinot Grigio - A crisp and clean white wine that enhances the dish's herby and cheesy notes without overpowering them.

Beer

Portuguese: Super Bock - This classic lager has a balanced flavor that pairs well with the richness of the cheese and the earthiness of the mushrooms.

General: Pilsner - A widely-available Pilsner offers a refreshing and slightly hoppy profile that complements the pizza's ingredients nicely.

Other Beverages

Espresso: A shot of rich, strong espresso adds a bold contrast to the pizza's flavors, enhancing the overall dining experience.
