Recipe Tips

For the best flavor, marinate the chicken in the orange juice, honey, garlic, grated ginger, paprika, olive oil, salt, and pepper for at least 1 hour (or overnight in the refrigerator) before roasting.
To ensure even cooking, cut the potatoes into uniform cubes, about 1-inch in size, and toss them with olive oil, salt, and pepper before adding them to the roasting pan around the chicken.
Avoid overcooking the chicken by using a meat thermometer to check for doneness; the internal temperature should reach 165°F (75°C). Also, consider covering the chicken with aluminum foil for the first half of the roasting time to prevent it from drying out.

Frequently Asked Questions

Can I substitute the white wine in the recipe?

Yes, you can substitute white wine with chicken broth or vegetable broth for a non-alcoholic version. If you're looking for a similar flavor profile, you can also use apple cider vinegar or a splash of lemon juice mixed with water.

How should I store leftovers from this roasted chicken and potatoes dish?

Store any leftovers in an airtight container in the refrigerator. They can last for up to 3-4 days. For longer storage, you can freeze the chicken and potatoes in a freezer-safe container for up to 3 months. Make sure to separate the portions for easier reheating.

What should I do if my chicken isn't browning properly during the baking?

If your chicken isn't browning properly, it may help to increase the oven temperature to 200ºC (400ºF) for the last 10 minutes of cooking. Additionally, make sure the chicken is not overcrowded in the pan, as good air circulation is essential for browning.

Recommended Drink Pairings

Wine

Portuguese: Vinho Verde - This light and refreshing wine complements the citrus notes from the orange juice while balancing the savory flavors of the roasted chicken.
