Directions

  1. Heat a pan with the water, margarine and some salt (to taste).
  2. When it boils, add the flour, stir with a wooden spoon and cook for about 3 minutes stirring constantly until you can form it into a ball.
  3. Remove and put the dough on a kitchen board, let it cool slightly and knead very well, until the dough has good texture.
  4. Let it cool completely (kneading occasionally so that it does not crust on cooling).
  5. Extend the dough as thin as possible with the help of a kitchen roll (do not spread the dough on a surface with flour as this makes the dough thick and dry), if you have any difficulty in extending it, lightly grease the worktop with a little oil.
  6. Cut the cheese into small cubes, chop the ham and the olives with a knife.
  7. Spread the dough, put a generous serving of cheese, ham and olives and fold the dough to cover the stuffing well.
  8. Cut the patties with a pasta cutter or anything of choice.
  9. Brush the patties with the beaten egg and crumble breadcrumbs on them.
  10. Fry in hot oil.
  11. Serve hot or cold.

Recipe Tips

For a flakier dough, consider chilling the margarine before incorporating it into the flour. This helps create layers in the dough and improves texture.
When preparing your filling, finely chop the black olives and mix them with the cheese and ham. This ensures an even distribution of flavors and prevents large chunks that may disrupt the patties' consistency.
Avoid overfilling the patties; use about 2 tablespoons of filling per patty. Overfilling can cause them to burst while cooking, leading to mess and uneven cooking.

Frequently Asked Questions

What can I use as a substitute for margarine in the dough?

You can use unsalted butter or any non-dairy margarine as a substitute for margarine. Coconut oil or vegetable shortening can also work well if you're looking for a dairy-free option.

How should I store leftover patties to maintain their freshness?

Store leftover patties in an airtight container in the refrigerator for up to 3 days. You can also freeze them for up to a month. To reheat, bake them in the oven at 350°F (175°C) until heated through.

My dough is too sticky; how can I fix this?

If your dough is too sticky, try adding a little more flour, a tablespoon at a time, until it reaches the desired consistency. However, be careful not to add too much flour as it can make the dough tough.

Recommended Drink Pairings

Wine

Portuguese: Alvarinho - This crisp and refreshing white wine complements the richness of the cheese and ham while balancing the saltiness of the olives.

General: Sauvignon Blanc - The zesty acidity and herbaceous notes of this wine enhance the flavors of the patties and cut through the richness of the filling.

Beer

Portuguese: Super Bock - This classic Portuguese lager offers a light, crisp finish that pairs well with the savory flavors of the patties.

General: Pilsner - A refreshing pilsner provides a clean and light backdrop that enhances the dish without overpowering it.

Other Beverages

Sparkling Water: The effervescence of sparkling water cleanses the palate and complements the savory elements of the dish beautifully.

Tried the recipe. I really liked working with the dough: soft and pliable and easy to bring the scraps back together. I found that I had way too much filling for the amount of dough. I easily had 2x what I needed. Very tasty and will try freezing the leftovers.
