Frequently Asked Questions
You can substitute lard or vegetable shortening with unsalted butter, which will add a rich flavor to the dish. Alternatively, you could use extra olive oil to maintain a lighter approach.
Store leftover braised spare ribs in an airtight container in the refrigerator for up to 3-4 days. You can also freeze them for up to 2-3 months; just ensure they're in a freezer-safe container with some of the cooking liquid to prevent freezer burn.
If the ribs are not tender after the specified cooking times, you can continue cooking them at a lower temperature (around 160°C) for an additional 30 minutes to 1 hour. Be sure to check for doneness periodically and add a little water or broth if the dish seems dry.
Recommended Drink Pairings
Wine
Portuguese: Douro Red - This wine's rich fruit and earthy notes complement the savory flavors of the braised spare ribs beautifully.
General: Cabernet Sauvignon - Its bold structure and tannins enhance the richness of the meat while balancing the dish's acidity.
Beer
Portuguese: Super Bock - This lager's crispness and light bitterness make it a refreshing counterpoint to the hearty ribs.
General: Amber Ale - The caramel malt flavors in an amber ale harmonize well with the savory notes of the dish.
Other Beverages
Espresso: A strong espresso serves as a perfect after-meal drink, cutting through the richness of the dish and providing a satisfying finish.
