Recipe Tips

Ensure your olive oil is of good quality; a strong, flavorful olive oil can enhance the taste of the cookies. However, if you prefer a milder flavor, consider using a light olive oil or replacing it with a neutral oil like canola or sunflower oil.
When measuring flour, spoon it into the measuring cup and level it off with a knife instead of scooping directly from the bag. This prevents packing the flour, which can lead to dry cookies due to excess flour content.
Avoid overmixing the dough once you add the flour. Overmixing can lead to tough cookies. Mix just until the flour is incorporated to maintain a tender texture.

Frequently Asked Questions

Can I substitute olive oil with another type of oil?

Yes, you can substitute olive oil with vegetable oil, canola oil, or melted coconut oil. However, keep in mind that each oil may slightly change the flavor of the cookies.

How should I store the cinnamon and lemon cookies to maintain freshness?

Store the cookies in an airtight container at room temperature for up to one week. If you want to keep them longer, you can refrigerate them for up to two weeks or freeze them for up to three months.

What should I do if my dough is too sticky to shape into balls?

If your dough is too sticky, try adding a little more flour, a tablespoon at a time, until it reaches a workable consistency. Make sure not to add too much flour, as it could affect the final texture of the cookies.

Recommended Drink Pairings

Wine

Portuguese: Vinho Verde - This light and refreshing wine pairs well with the bright flavors of lemon and the warmth of cinnamon in the cookies.

General: Pinot Grigio - The crisp acidity and citrus notes of Pinot Grigio complement the lemon zest while balancing the sweetness of the cookies.

Beer

Portuguese: Sagres - This pale lager offers a light and crisp profile that enhances the buttery texture of the cookies without overpowering their flavors.

General: Blonde Ale - A blonde ale's mild malt sweetness and subtle hop character work harmoniously with the cinnamon and lemon notes in the cookies.

Other Beverages

Chamomile Tea: The soothing floral notes of chamomile tea provide a calming contrast to the spiced cookies, making for a delightful pairing.
