Directions

  1. On a baking dish, place the chopped onion cut in half-moon, the chopped garlic cloves, tomatoes without skin and chopped in pieces, chicken, parsley, salt and pepper (to taste), olive oil, white wine and finally the bacon cut into pieces.
  2. Place in a preheated oven at 210°C or 410°F and bake for about 30 minutes.

Recipe Tips

To achieve maximum crispiness, ensure the chicken pieces are thoroughly dried with paper towels before seasoning and baking. This helps the skin render the fat from the bacon more effectively.
Consider marinating the chicken in the olive oil, white wine, minced garlic, salt, and pepper for at least an hour (or overnight) before baking. This enhances flavor penetration and moisture retention.
Avoid overcrowding the baking dish. Leave some space between the chicken pieces to allow for even cooking and browning. If necessary, bake in batches or use multiple pans.

Store any leftover oven-baked chicken in an airtight container in the refrigerator for up to 3-4 days. You can also freeze it for up to 2-3 months. To reheat, simply warm it in a preheated oven or microwave.
