Directions
- Unroll the puff pastry and place it in the pie pan, adjust the pastry around the pan, cut any excess pastry that sticks out of the pan and poke the bottom with a fork.
- In a small pot, heat the milk, sugar, cornstarch (dissolved in a little milk) and the lemon peel, bring to a boil, remove the lemon peel, add the previously beaten egg yolks and mix well.
- Put the cream on top of the puff pastry in the pie pan and bake at 220ºC or 420ºF for about 35 minutes or until cooked to your liking.
- Place it in the refrigerator once cool and serve it fresh.
Note: If you leave it in the refrigerator to long, the pastry will lose the crispiness and will get soft.

Frequently Asked Questions
What can I substitute for the puff pastry if I can't find it?
You can use a shortcrust pastry or make a homemade pastry dough using flour, butter, water, and a pinch of salt as an alternative to puff pastry. Both options will give a nice texture to the custard tart.
How can I prevent the puff pastry from getting soggy after refrigeration?
To maintain the crispiness of the puff pastry, bake the custard tart and let it cool completely before refrigerating. Alternatively, serve the tart shortly after it's completely cooled to avoid sogginess.
What can I do if my custard mixture curdles while cooking?
If the custard curdles, it may be due to cooking on too high a heat or adding the yolks too quickly. To fix it, remove it from the heat immediately, blend the mixture until smooth, and then return to low heat, stirring continuously until it thickens again.
Recommended Drink Pairings
Wine
Portuguese: Madeira Wine - The rich, nutty flavors of Madeira complement the sweetness and creaminess of the custard tart beautifully.
General: Late Harvest Riesling - This wine's balanced acidity and sweetness enhance the dessert's flavors without overpowering them.
Beer
Portuguese: Sagres Beer - This light lager offers a refreshing contrast to the rich custard, cleansing the palate after each bite.
General: Hefeweizen - The fruity and spicy notes of a Hefeweizen harmonize well with the lemon and creaminess of the tart.
Other Beverages
Espresso: A shot of espresso provides a robust coffee flavor that pairs excellently with the sweetness of the custard tart.
