  5. Bake the cake for about 45 minutes.
  6. Let it cool, unmold, cut into slices and serve.

Recipe Tips

Ensure your eggs are at room temperature before mixing. This helps to create a better emulsion with the sugar and results in a lighter cake texture.
For a more intense coffee flavor, consider substituting half of the coffee with espresso. You can also add a tablespoon of instant coffee granules to the batter for an extra kick.
Be careful not to overmix the batter once the flour is added. Overmixing can lead to a dense cake due to the development of gluten, resulting in a less tender crumb.

Frequently Asked Questions

Can I substitute the eggs in this recipe?

Yes, you can substitute the eggs with flaxseed meal or applesauce. For each egg, use 1 tablespoon of ground flaxseed mixed with 2.5 tablespoons of water, or 1/4 cup of unsweetened applesauce. This will keep the texture moist.

How should I store the cake after baking it?

Allow the cake to cool completely, then store it in an airtight container at room temperature for up to 3 days. For longer storage, you can refrigerate it for up to a week or freeze slices wrapped in plastic wrap and then in foil for up to 3 months.

What can I do if my cake doesn't rise properly?

If your cake doesn't rise, it might be due to expired baking powder or not mixing the ingredients thoroughly. Always check the expiration date on your baking powder and ensure it's fresh. Additionally, make sure to evenly distribute the baking powder with the flour before adding wet ingredients.
