Ingredients

1 whole chicken4 cloves of garlic1 tablespoon of ground mild pepper1 teaspoon of fine herbs1 bay leaf1/2 cup of olive oil1 cup of beerPiri piri sauce (to taste)A pinch of salt1 lemon1 cube of knorr chicken broth1 1/2 tablespoons of margarine

With all your ingredients and equipment gathered, you are ready to get started!

Directions

  1. Preheat the oven to 170ºC or 340ºF.
  2. Wash the chicken, place it on a tray and put aside.
  3. In a bowl, place the finely chopped peeled garlic cloves, mild pepper, fine herbs, bay leaf, olive oil, beer, piri piri sauce and salt.
  4. Mix everything and rub it all over the chicken (outside and inside),  also place inside the chicken broth cube and three slices of lemon.
  5. Finally add the juice of the other 1/2 of the lemon over the chicken and spread the margarine cut in cubes.
  6. Bake the chicken for about 1 hour turning it occasionally or until it's cooked and golden brown.

Recipe Tips

To ensure even cooking and maximum flavor absorption, let the chicken marinate in the beer and lemon mixture for at least 2 hours, or ideally overnight in the refrigerator. This allows the acidity in the lemon and beer to tenderize the meat.
When adding the Piri Piri sauce, start with a small amount (1 teaspoon) and taste as you go. The heat can vary significantly between brands, so adjust according to your heat preference to avoid overpowering the dish.
Common mistake: Avoid skipping the step of removing excess moisture from the chicken before roasting. Pat the chicken dry with paper towels to achieve a crispy skin, as excess moisture will steam the chicken instead of roasting it.
