Ingredients

2 and 1/4 lbs of flour2 cups of sugar6 eggs1 cup of milk1/2 cup of olive oil3 tablespoons of brandy1 teaspoon baking powder1 teaspoon of baking soda

Directions

  1. In a large bowl, add the flour, sugar, baking powder, baking soda and a pinch of salt.
  2. Mix well, make a hole in the middle and add the remaining ingredients and mix until the consistency is a bit hard.
  3. Add spoonfuls on the baking sheet dusted with flour (keep them separated because they will get bigger).
  4. Brush them with egg yolk and sprinkle with sugar or cinnamon (to taste).
  5. Bake at 180°C or 350°F for about 15 to 20 minutes.

Recipe Tips

When measuring your flour, spoon it into the measuring cup and level it off with a knife instead of scooping directly from the bag. This prevents the flour from being compacted, which can lead to dry biscuits.
For a richer flavor, consider adding a teaspoon of vanilla extract or a pinch of nutmeg to the batter along with the brandy. These spices complement the sweetness and enhance the overall taste of the biscuits.
Be careful not to overmix the dough once the wet and dry ingredients are combined. Overmixing can lead to tough biscuits. Mix just until the ingredients are combined and you see no dry flour remaining.
