  2. In a pot, put a generous amount of olive oil, add a few chopped bacon bits, the onion and let it cook, when the onion is translucent, add the chopped garlic, bay leaf, grated carrot and pepper.
  3. Sauté for a few minutes then add the cooked and shredded chicken and the cooked sausage cut into small pieces.
  4. Add a good amount of the broth/water you used to cook the chicken and sausage in, when it boils, add the rice.
  5. Stir and season with salt and pepper to taste.
  6. Cover and cook over low heat, stirring occasionally so it doesn't stick to the bottom of the pot.
  7. When the rice is almost cooked (about 15 minutes), transfer everything to a baking dish.
  8. Preheat the oven to 180C or 350F.
  9. Place the uncooked sausage (1/4) cut into slices on top and cover with cheese.
  10. Sprinkle with the chopped parsley and bake until the cheese is golden brown (15 to 20 minutes).

Recipe Tips

To enhance the flavor of your chicken rice, sauté the chopped onion, garlic, and red pepper in olive oil until they are fragrant and the onion is translucent before adding the rice. This step helps to build a rich base of flavor.
A common mistake is not rinsing the rice before cooking. Rinse the rice under cold water until the water runs clear to remove excess starch. This will help prevent the rice from becoming gummy and ensure it cooks evenly.
For added depth and complexity, consider incorporating a splash of white wine or chicken broth instead of some of the water when cooking the rice. This will infuse the dish with additional flavors that complement the chicken and sausage.

Frequently Asked Questions

Can I use leftover rotisserie chicken instead of cooking my own chicken?

Yes, using leftover rotisserie chicken is a great time-saving substitution. Just shred the chicken and add it to the pot when the recipe requires cooked chicken.

What can I substitute for Portuguese sausage if I can't find it?

If you can't find Portuguese sausage, you can substitute it with chorizo or kielbasa. Both will add a similar smoky flavor to the dish.

How can I store leftovers of baked chicken rice?

Store leftover baked chicken rice in an airtight container in the refrigerator for up to 3 days. You can reheat it in the microwave or in the oven at a low temperature until warmed through.

This sounds delicious. It's one step further than our "Portuguese Chicken and Rice". We stop before the casserole dish in the oven.

Under ingredients it doesn't say anything about carrots until you get to directions. So does this recipe have carrots?
