With all your ingredients and equipment gathered, you are ready to get started!

Directions

  1. Soften the bread in half the warm milk and mix well with a hand blender.
  2. Add the remaining milk, eggs, sugar and cinnamon and mix everything well.
  3. Spread the caramel all over the pudding form/mold and fill it with the bread batter.
  4. Bake in the oven in a water bath for about 45 minutes at a temperature of 200ºC or 390ºF.

Recipe Tips

For a richer flavor, use day-old bread or even brioche instead of fresh bread. The drier texture allows it to absorb the custard mixture better, resulting in a creamier pudding.
When mixing the eggs and sugar, ensure you whisk them together until the mixture is pale and slightly thickened. This helps to incorporate air, making your bread pudding lighter and fluffier.
Avoid overbaking the bread pudding; check for doneness around 30 minutes. The center should be set but still slightly wobbly, as it will continue to firm up as it cools. Overbaking can lead to a dry texture.

Frequently Asked Questions

Can I use a different type of bread for this pudding?

Yes, you can use a variety of breads for this recipe. Brioche, challah, or even day-old bagels can provide different flavors and textures. Just ensure the bread is somewhat stale to allow it to absorb the milk mixture properly.

How do I store leftovers of the cinnamon bread pudding?

Store any leftover bread pudding in an airtight container in the refrigerator for up to 3 days. You can also reheat individual portions in the microwave or in the oven for a warm treat.

What should I do if my bread pudding is too dry after baking?

If your bread pudding turns out too dry, it may be due to insufficient liquid or overbaking. You can remedy this by serving it with a drizzle of warm milk or cream, or a scoop of ice cream. To avoid dryness next time, ensure the bread is properly soaked and keep an eye on the baking time.

Recommended Drink Pairings

Wine

Portuguese: Madeira Wine - This fortified wine has rich caramel notes that complement the sweetness of the bread pudding.

General: Late Bottled Vintage Port - With its lush fruit flavors and slight sweetness, it pairs beautifully with the warm spices in the dessert.

Beer

Portuguese: Super Bock - This lager has a light crispness that balances the richness of the pudding while enhancing its sweetness.

General: Brown Ale - The malty sweetness and nutty flavors of brown ale make it a perfect match for the cinnamon and caramel in the dish.

Other Beverages

Coffee: A rich, dark roast coffee pairs well with the dessert, enhancing its warm flavors and providing a satisfying contrast.

Hi. I make this recipe a little differently. My grandmother always added port wine to it. My daughter keeps asking for me to make it again. Very yummy.
