Ingredients

1 lb of carrots2 eggs1 cup of sugarZest from 1/2 a lemon1/4 cup of margarine3 tablespoons of cornstarch1 cinnamon stick

With all your ingredients and equipment gathered, you are ready to get started!

Directions

  1. Begin by cooking the peeled carrots in water with salt and the cinnamon stick.
  2. Once the carrots are cooked, drain and remove the cinnamon stick.
  3. Puree the carrots.
  4. Melt the margarine and let it cool.
  5. Beat the carrot puree with the sugar, the egg yolks, the lemon zest and the margarine in a mixer.
  6. Add the cornstarch flour and stir.
  7. Beat the 2 egg whites and add it to the mixture, mix it well.
  8. Divide the mixture in greased cupcake pan with cups dusted with flour.
  9. Place it in a preheated oven at 200 ºC or 390 ºF .
  10. After 15 minutes reduce the temperature to 180 ºC or 350 ºF. 
  11. Bake for about 40 minutes.
  12. After 40 minutes test it with a toothpick, if it comes out dry, they are ready.
  13. Remove them from the oven.
  14. Let them cool and unmold.

Recipe Tips

To enhance the flavor of your carrot tarts, roast the carrots before using them in the recipe. This will caramelize the natural sugars and add depth to the tart. Simply peel and chop the carrots, toss them with a little olive oil, and roast at 400°F (200°C) for about 20-25 minutes until tender and slightly caramelized.
When incorporating the lemon zest, make sure to use a microplane grater to finely zest the lemon. This will release more essential oils and provide a stronger lemon flavor without the bitterness that can come from the pith (the white part of the lemon).

These are absolutely delicious and I have made them quite a few times. My only recommendation is if you are not a fan of really sweet desserts like me, reduce the sugar to about 2/3 cup. I also add a little good quality cinna,on to the batter because I love cinnamon with carrot. Yummm Have a batch in the oven right now.
