Ingredients
1 medium chicken (approx. 1.4 kg / 3 lbs)1 chouriço (approx. 225 g / 8 oz)3 cloves of garlic1 tablespoon of mild pepper1 tablespoon of lard1 tablespoon of margarine1 kg (2.2 lbs) of potatoes1 teaspoon or paprika1 small chilli pepper200 ml (6.8 oz) of white wineOlive oil (to taste)Half of a lemonParsley (to taste)
Directions
- Cut the chicken in half, wash and dry.
- Rub it with the half lemon.
- In a blender, make a paste with the chouriço, garlic, parsley, and chilli pepper.
- In a bowl mix the paste with the mild pepper, lard, and melted margarine, then rub the chicken thoroughly with this mixture.
- Peel and cut the potatoes, seasoning them with salt, paprika, and a drizzle of olive oil.
- Arrange the chicken and potatoes on a baking tray, pour the white wine over them, and bake at 180°C (350°F) for approximately one hour.
- Baste the chicken and potatoes occasionally with the pan juices during the cooking process to keep the meat moist and the potatoes flavorful.
