  2. Beat the sugar with the eggs, add the flour, the melted margarine and finally the yogurts and beat some more.
  3. Grease the cupcake pan(s) with margarine, dust with flour and distribute the dough between the cups, becareful not to over fill because they will rise a little.
  4. Bake for about 30 minutes or until your liking.
  5. Let them cool.
  6. When they are cold, sprinkle with powdered sugar.

Recipe Tips

To achieve a perfectly creamy texture for your tarts, ensure that the coconut yogurt is at room temperature before mixing. Cold yogurt can cause the margarine to solidify, leading to a lumpy batter.
When measuring the flour, spoon it into the measuring cup and level it off with a knife instead of scooping directly from the bag. This prevents packing the flour, which can result in a denser tart.
Avoid overmixing the batter once the ingredients are combined. Overmixing can lead to a tough texture in the final tart. Mix just until all ingredients are incorporated.

Frequently Asked Questions

Can I substitute coconut yogurt with another type of yogurt?

Yes, you can substitute coconut yogurt with regular yogurt, Greek yogurt, or a dairy-free yogurt alternative if you prefer. Keep in mind that the flavor and texture might change slightly, especially if using yogurts with different fat contents.

How should I store the leftover tarts?

Store any leftover tarts in an airtight container in the refrigerator for up to 3-4 days. You can also freeze them for up to a month; just make sure to wrap them well to prevent freezer burn.

What should I do if the tarts overflowed while baking?

If your tarts overflowed during baking, it may be because they were overfilled. To prevent this in the future, try filling the cups only about 2/3 full. If they overflowed and are stuck, let them cool a bit before attempting to remove them using a small knife to gently loosen the edges.

Recommended Drink Pairings

Wine

Portuguese: Vinho Verde - This light and refreshing wine complements the creaminess of the tarts while enhancing the coconut flavor.

General: Moscato - The sweet and fruity notes of Moscato pair beautifully with the sweetness of the coconut yogurt tart.

Beer

Portuguese: Super Bock - This pale lager offers a crisp and light taste that balances the richness of the tarts.

General: Wheat Beer - The subtle fruity and spicy notes of wheat beer complement the coconut flavor without overpowering it.

Other Beverages

Coconut Water: The refreshing taste of coconut water enhances the coconut aspect of the tarts while providing a hydrating element.

I would actually recommend greasing the tins with a spray or butter over using liners Barbara.

Can you substitute the coconut yogurt for vanilla? Does it need to be regular yogurt or can it be low fat? I ask because low fat is usually has a more liquid consistency and it might affect the tarts.
