  5. Put the dough in a greased and dusted with flour cake form.
  6. Bake at 180C or 355F for about 25-30 minutes.

Recipe Tips

Ensure that your egg whites are at room temperature before whipping them. This will help them achieve maximum volume, resulting in a lighter and fluffier cake.
When adding the orange zest, make sure to only use the outer layer of the peel. Avoid the white pith underneath, as it can impart a bitter taste to your cake.
Be cautious not to overmix the batter once you combine the wet and dry ingredients. Overmixing can lead to a dense cake; mix just until the flour is incorporated for the best texture.

Frequently Asked Questions

Can I use a different type of yogurt instead of natural yogurt?

Yes, you can substitute natural yogurt with Greek yogurt or flavored yogurt. Keep in mind that flavored yogurts will alter the taste of the cake. If using Greek yogurt, it may result in a denser texture, so you may need to adjust the moisture slightly by adding a little milk.

How should I store leftover Fluffy Yogurt Cake?

Store the leftover cake in an airtight container at room temperature for up to 2 days. For longer storage, you can refrigerate it for up to a week. Alternatively, you can freeze slices of the cake in a freezer-safe container for up to 3 months. Just make sure to wrap them well to prevent freezer burn.

What can I do if my cake doesn't rise properly?

If your cake doesn't rise properly, it may be due to old or inactive baking powder. Always check the expiration date of your baking powder before using. Additionally, make sure to gently fold the beaten egg whites into the batter to maintain their airiness. Avoid overmixing after adding the egg whites, as this can deflate the batter.

Recommended Drink Pairings

Wine

Portuguese: Vinho Verde - This light and refreshing wine has a slight effervescence that complements the citrus notes of the orange zest in the cake.

General: Moscato - The sweet and fruity profile of Moscato pairs beautifully with the moist texture and sweetness of the yogurt cake.

Beer

Portuguese: Super Bock - This amber lager's malty sweetness and light bitterness enhance the flavors of the cake without overpowering it.

General: Belgian Witbier - The subtle spice and citrus notes in a Belgian Witbier provide a delightful contrast to the fluffy yogurt cake.

Other Beverages

Orange Tea: The bright and fragrant notes of orange tea echo the citrus zest in the dessert, creating a harmonious pairing.
