Frequently Asked Questions

Can I substitute sugar with a sugar alternative in this recipe?

Yes, you can use a sugar alternative, such as stevia or erythritol, in place of sugar. However, the sweetness level may differ, so adjust the amount according to taste. Keep in mind that some alternatives might alter the texture of the pudding.

How should I store leftover chocolate pudding with caramel?

Store any leftover chocolate pudding with caramel in an airtight container in the refrigerator. It should keep well for up to 3-4 days. Make sure to cover it to prevent it from absorbing odors from other foods.

What should I do if my caramel is too hard or burnt?

If your caramel is too hard, it likely cooked too long or at too high a temperature. If it's burnt, unfortunately, you'll need to start over. To avoid hard caramel, keep an eye on it as it cooks, and remove it from heat as soon as it has a golden-brown color. For a smoother caramel, adding a little cream after it's removed from heat can help.

Recommended Drink Pairings

Wine

Portuguese: Porto - The rich, sweet notes of Porto complement the chocolate and caramel beautifully, enhancing the dessert's flavors.

General: Ruby Cabernet - This wine's fruity profile and soft tannins provide a lovely balance to the richness of the pudding.

Beer

Portuguese: Super Bock - This lager's lightness and crispness offer a refreshing contrast to the dense sweetness of the chocolate pudding.

General: Stout - A stout's chocolatey flavors and creamy mouthfeel pair wonderfully with the dessert's cocoa and caramel elements.

Other Beverages

Espresso: A strong and bold espresso can cut through the sweetness of the pudding, providing a delightful contrast.
