Chouriço and Chickpea Salad Recipe

This simple chouriço and chickpea salad recipe, is easy to make, very tasty and a great quick week day meal.

Ingredients

1/2 lb of Portuguese chouriço3 cans of chick peas, drained1 punnet of cherry tomatoes, halved1 teaspoon of paprika1 bunch of parsley2 tablespoons of olive oil

With all your ingredients and equipment gathered, you are ready to get started!

Directions

  1. Heat the olive oil in a frying pan on high heat.
  2. Fry the chouriço until its crispy on the outside.
  3. Stir in the drained chickpeas, paprika and cook for another 2-3 minutes.
  4. Remove from the heat and stir in the tomatoes, and add parsley.
  5. Serve warm.
