With all your ingredients and equipment gathered, you are ready to get started!

Directions

  1. Set aside the crabs in a bowl off to the side.
  2. Fill a 5 gallon pot half way with water. Add all the ingredients except for the crabs. Bring it to a rapid boil on high heat.
  3. Once the water is boiling begin to add the crabs to the pot. They will likely need to be cooked in 1-2 batches depending on the size of the pot.
  4. The crabs will need to boil for about 25 minutes. Stir the pot well as they cook.
  5. They will begin to float when they are fully cooked. At this point you can pull them from the water and let them cool in a serving platter.
  6. They are ready to serve once done cooking.

Notice: Crabs will stay fresh in the fridge for about a week, you can also freeze them right after they are boiled and store them in the freezer.

Recipe Tips

When boiling crabs, always ensure that the water is at a rolling boil before adding the crabs. This helps to cook them evenly and prevents them from being submerged in cold water, which can lead to a mushy texture.
For added depth of flavor, sauté the chopped onions in a little olive oil until they are translucent before adding them to the boiling pot. This enhances the sweetness of the onions and complements the spices beautifully.
Avoid overcrowding the pot; if necessary, boil the crabs in batches. Overcrowding can lower the water temperature and result in uneven cooking, with some crabs potentially being undercooked while others are overdone.

Frequently Asked Questions

What can I use instead of Old Bay seasoning if I don't have it?

If you don't have Old Bay seasoning, you can substitute it with a mix of paprika, celery salt, black pepper, and a pinch of cayenne pepper for some heat. Alternatively, a combination of Italian seasoning with a bit of mustard powder can also work.

How should I store leftover cooked crabs?

Leftover cooked crabs can be stored in the refrigerator for up to a week in an airtight container. Make sure to let them cool completely before sealing. You can also freeze them for longer storage; just ensure they are tightly wrapped to prevent freezer burn.

What should I do if the crabs don't float after the cooking time?

If the crabs do not float after the suggested cooking time, check that the water was boiling vigorously when you added them. If they still seem undercooked, boil them for an additional 5-10 minutes, as cooking times can vary based on crab size and pot conditions.

Recommended Drink Pairings

Wine

Portuguese: Vinho Verde - This light and refreshing wine complements the sweetness of the crab while balancing the spice from the seasoning.

General: Sauvignon Blanc - Its high acidity and citrus notes make it a perfect match for the flavors of the crab and the zesty lemon.

Beer

Portuguese: Super Bock - This lager offers a crisp and refreshing taste that pairs well with seafood dishes like crab boil.

General: Pale Ale - The hoppy bitterness and citrus notes of a pale ale can enhance the flavors of the crab and spices in the dish.

Other Beverages

Lemonade: A refreshing and slightly sweet drink that accentuates the lemon in the dish and balances the heat from the spices.
