The red wine adds a unique depth while fresh veggies and short-grain rice tie it all together. Whether you're cooking for friends or just treating yourself, this recipe is sure to impress. Let's dive in and enjoy every delicious bite!

Tips for Success

Before cooking the octopus, tenderize it by freezing it for at least 24 hours. This will break down its fibers and result in a more tender final dish.

When adding the red wine, allow it to simmer and reduce before adding the rice. This will enhance the flavors and ensure the rice absorbs the rich taste of the wine.

Avoid overcooking the rice by checking its doneness a few minutes before the suggested cooking time. Rice should be al dente, as it will continue to cook slightly after being removed from heat.

Frequently Asked Questions

Can I use frozen octopus instead of fresh for this yum octopus rice with red wine recipe?

Yes, you can use frozen octopus. Just make sure to thaw it completely before cooking to ensure even cooking and better texture.

What can I substitute for short grain rice if I don't have any on hand?

If you don't have short grain rice, you can use medium grain rice or even long grain rice as a substitute, but be aware that the texture may be slightly different. Adjust the cooking time and liquid proportions accordingly.

How should I store leftover yum octopus rice?

Store any leftover yum octopus rice in an airtight container in the refrigerator for up to 3 days. To reheat, add a splash of water and heat gently on the stove or in the microwave to prevent the rice from drying out.

Recommended Drink Pairings

  • Pinot Noir: This red wine complements the octopus and enhances the dish's savory notes.
  • Sauvignon Blanc: Its acidity and citrus notes balance the richness of the olive oil and octopus.
  • Sparkling Water: The bubbles cleanse the palate and refresh between bites.
  • Chardonnay: A lightly oaked Chardonnay adds a creamy texture that pairs well with the rice.
  • Green Tea: The earthy flavors of green tea provide a nice contrast to the dish's richness.

  4. Add the garlic, tomatoes, and chooped pepper, season with salt and pepper to taste and cook for a few minutes longer.
  5. Add the octopus and cooking liquid from the octopus and bring it to a boil.
  6. Add rice (preferably a short-grain) and bring back to a boil, then turn the heat very low and put the lid on the saucepan.
  7. After 15 minutes, stir to ensure the rice is not sticking to the bottom.
  8. After 5 minutes, taste the rice to make sure it is done.

About 30 minutes if it's a large octopus, if a little one, anywhere from 10 to 15 minutes, make sure to check if it's cooked and cook a little more if needed.
