Recipe Tips

Ensure to marinate the chicken for at least 4 hours, or overnight if possible, to allow the flavors from the garlic, citrus juices, and spices to penetrate the meat thoroughly, resulting in a more flavorful dish.
For an extra kick, consider adding fresh or dried chili peppers to the marinade, adjusting the amount based on your heat preference. This will enhance the authentic Piri Piri heat.
Avoid using pre-ground spices for the paprika and oregano; opt for whole spices and grind them fresh if possible. This will significantly elevate the flavor profile of your dish.

Frequently Asked Questions

Can I substitute the piri piri sauce with something else?

Yes, if you don't have piri piri sauce, you can use a mix of hot sauce and a little vinegar to achieve a similar spicy and tangy flavor. Alternatively, try using harissa or a blend of chili powder and cayenne for spice.

How should I store leftovers and how long do they last?

Store leftover piri piri chicken in an airtight container in the refrigerator. It will last for up to 3-4 days. You can also freeze it for up to 3 months; just ensure it's properly sealed to avoid freezer burn.

What should I do if the chicken is not cooking evenly?

If your chicken is not cooking evenly, ensure that all pieces are of similar size to allow for even cooking. You can also rotate the baking dish halfway through cooking and baste the chicken more frequently to promote even browning.

Recommended Drink Pairings

Do not like my food to hurt me. Hot peppers are not my friend. Tried piri piri twice and used only half of the amount listed in the recipes. Discarded the end product. Never again.
So, I think I will try using 1/2 t of smoked paprika (in addition to the sweet paprika above).
