Tips for Success

To properly prepare the dry salted cod, soak it in cold water for at least 24 hours, changing the water a few times to remove excess salt. This will help ensure that your omelette isn't overly salty.

When cooking the onions, sauté them in olive oil over medium heat until they are soft and translucent before adding the cod. This will enhance their sweetness and flavor, making the omelette more delicious.

Avoid overcooking the omelette by cooking it on low heat. Once the edges start to set, gently lift them with a spatula to allow uncooked egg to flow underneath, ensuring a fluffy texture without browning the bottom too much.

Frequently Asked Questions

Can I use fresh cod instead of salted cod for this recipe?

Yes, you can use fresh cod, but you will need to season it with salt, as the flavor and preservation method will differ from salted cod. Just sauté the fresh cod in the skillet with some olive oil before adding the eggs.

How should I store leftover omelette?

Store leftover omelette in an airtight container in the refrigerator. It will stay fresh for up to 2 days. To reheat, you can use a microwave or a skillet over low heat, adding a few drops of water to keep it moist.

What can I substitute for parsley if I don't have any?

If you don't have parsley, you can use other herbs such as cilantro, chives, or dill for a different flavor profile. Alternatively, you can simply omit the herbs if you prefer a more straightforward taste.

Recommended Drink Pairings

  • Chardonnay: Its crisp acidity complements the richness of the omelette.
  • Sauvignon Blanc: The bright citrus notes enhance the flavors of the cod and parsley.
  • Sparkling Water: The bubbles cleanse the palate between bites of the savory dish.
  • Black Coffee: The bitterness balances the saltiness of the cod and adds depth.
  • Herbal Tea: A light chamomile or mint tea can provide a refreshing contrast.

Directions

  1. Salt cod arrives in the form of dehydrated fish jerky preserved in a layer of salt, it requires reconstituting before cooking.
  2. Cut out a portion (the rest can be refrigerated or stored in any dry place practically forever) and rinse away as much salt off the fish as you can under some cold water.
  3. Then submerge it in clean water overnight, for at least eight hours,  at room temperature – repeated rinsing and changing the water to remove more salt if desired. Be careful of pointed fish bones and fins when handling.
  4. Drain the softened salt cod and pat dry with a towel.
  5. Peel away all skin and rinse off any scales that are removed in the process.
  6. Debone the fish by hand and break the meat it into small bite-sized chunks. Squeeze out any excess water from the chunks of cod and place them in a bowl.
  7. Thinly slice half an onion and caramelize with olive oil over medium heat. Remove caramelized onions from the skillet. Add more olive oil to the hot skillet and pour in your beaten eggs.
  8. When the eggs begin to solidify add on the caramelized onions and salt cod, making sure to spread them out across the omelette.
  9. Sprinkle finely chopped parsley and pepper to taste over everything as the omelette finishes cooking.
