Why You Will Love This Recipe

Get ready for a cozy meal with these yum roasted chicken legs and potatoes! Picture tender chicken legs paired with crispy golden potatoes and fragrant herbs like lemon thyme. A zesty garlic and mustard rub, a splash of white wine, and a touch of sweet raisins bring it all together. This simple recipe is perfect for impressing family and friends any night of the week!

Tips for Success

Ensure that you soak the raisins in warm water for about 10-15 minutes before adding them to the dish. This will help them plump up and prevent them from becoming hard during the roasting process.

When seasoning the chicken legs, use a mixture of olive oil, lemon juice, mustard, salt, and pepper to create a marinade. Let the chicken marinate for at least 30 minutes (or up to overnight) to enhance the flavor and tenderness of the meat.

Avoid overcrowding the roasting pan. Make sure there is enough space between the chicken legs and potatoes to allow for proper air circulation, which will result in a crispier skin on the chicken and evenly cooked potatoes.

Frequently Asked Questions

Can I substitute chicken legs with other cuts of chicken?

Yes, you can substitute chicken legs with chicken thighs or drumsticks. Adjust the cooking time as necessary, as different cuts may require different baking times.

What is the best way to store leftovers from this dish?

Allow the leftovers to cool to room temperature, then store them in an airtight container in the refrigerator for up to 3 days. You can also freeze the leftovers for up to 3 months. To reheat, bake in the oven at 350°F until heated through.

What should I do if the chicken is not cooking evenly?

If you notice the chicken is not cooking evenly, you can rotate the tray halfway through the cooking process for better heat distribution. Also, check the internal temperature to ensure that it reaches a safe 165°F for poultry.

Recommended Drink Pairings
