Ingredients

2 and 1/2 tablespoons of gelatin powder or 5 gelatin sheets1 cup of condensed milk1 cup of heavy cream1 lb of strawberries

With all your ingredients and equipment gathered, you are ready to get started!

Directions

  1. Place the gelatin sheets in cold water for about 10 minutes (until soft).
  2. Remove the gelatin from the cold water, place it in container with a little boiling water (1/2 cup) and let it dissolve.
  3. Beat the condensed milk, cream, gelatin and about 3/4 lb of the strawberries without the leaves in a blender.
  4. Put everything in a glass dish and leave it in the refrigerator for at least 6 hours.
  5. Garnish with the left over strawberries.

Recipe Tips

When using gelatin sheets, be sure to soak them in cold water for about 5-10 minutes until they are soft before adding them to your mixture. This prevents clumping and ensures a smooth texture in your mousse.
For a more intense strawberry flavor, consider pureeing half of the strawberries and folding them into the mousse mixture, while reserving the other half to chop and fold in for added texture and freshness.
Avoid overwhipping the heavy cream; stop when soft peaks form. Overwhipped cream can turn grainy, affecting the light and airy texture of your mousse.

Frequently Asked Questions

Can I substitute the heavy cream with a lighter alternative?

Yes, you can substitute heavy cream with a lighter alternative like whipped coconut cream or Greek yogurt. However, this may affect the overall texture and richness of the mousse.

How long can I store the strawberry mousse in the fridge?

You can store the strawberry mousse in the refrigerator for up to 3 days. Make sure it is covered properly to maintain its freshness.

What should I do if the mousse doesn't set properly?

If the mousse doesn't set properly, it may be due to insufficient gelatin. Ensure that you fully dissolve the gelatin in boiling water before incorporating it into the mixture, and make sure to chill it for the full 6 hours.

Recommended Drink Pairings

Wine

Portuguese: Vinho Verde - This light and refreshing wine complements the sweetness of the strawberries beautifully.

Other Beverages

Coffee: A smooth, lightly roasted coffee can provide a delightful contrast to the sweetness of the mousse.

If you use the powder, you don't have to put it in cold water, just the 1/2 cup of hot water.

The amount of gelatin if using powder is an awful lot, and I think this would not be very flavorful as a result.

Frederick, unflavored gelatin should have no taste or odor so therefore it won't effect the taste at all and will actually absorb the taste of the strawberries.

What are gelatin sheets and where do you buy them?

Sheet Gelatin, also called Leaf Gelatin, works like granular gelatin found in your local grocery store, but in a different form. Rather than a powder, it is takes the shape of thin sheets or leaves of gelatin film. The sheets dissolve more slowly than the granulated form, but also produce a clearer gelled product. If you can't find the sheets/leaves, you can buy the powder at Walmart or other bigger grocery stores, if you do get the powder, search on google to convert sheets to powder and it will tell you how much powder to use, hope that helps. :)
