Directions

  1. Blend together the eggs, sugar, condensed milk and milk.
  2. Make a caramel syrup with the water and sugar (in medium heat simmer the water and sugar until the syrup turns a golden caramel color). Pour into a pudding dish and spread evenly across the surface. Let it harden and pour the pudding batter on top.
  3. Bake in a water bath (banho maria) at 180ºC or 350ºF for about 45 minutes (do the toothpick test, if you are not sure; it's ready when the toothpick comes out moist but without pudding on it).

Recipe Tips

When preparing the caramel, ensure that the sugar is completely dissolved in the water before bringing it to a boil. Stir continuously until the sugar turns a deep amber color, but avoid stirring it once it starts boiling to prevent crystallization.
For a creamier texture, blend the eggs, condensed milk, and milk mixture until smooth before pouring it into the caramel-coated mold. This will help eliminate any egg lumps and create a velvety pudding.
Avoid overcooking the pudding by checking for doneness with a toothpick inserted in the center. It should come out clean, but if it comes out with wet batter, reduce the baking time slightly and check every few minutes to prevent drying out.

Frequently Asked Questions

Can I substitute condensed milk with another ingredient?

Yes, you can use evaporated milk combined with additional sugar as a substitute for condensed milk. Use 1 cup of evaporated milk and add 1/2 cup of granulated sugar to achieve a similar sweetness and texture.

How should I store leftovers of sweet milk pudding?

Store any leftovers in an airtight container in the refrigerator. It will keep well for about 3-4 days. If you want to reheat it, do so gently in the microwave or in a water bath to prevent it from overcooking or drying out.

What should I do if my pudding doesn't set properly after baking?

If your pudding doesn't set, it may need more time in the oven. Check if it's undercooked by doing a toothpick test. If the toothpick comes out too wet, bake for an additional 5-10 minutes. Ensure that you're baking it in a proper water bath, which helps maintain even cooking.

Recently discovered the Banho Maria pan in my cabinet. We lived in Brasil for 4 years in the 1980's and we enjoyed it while we were there. Thought I might try it again.
If anyone has any suggestions I'd appreciate it
