  2. In a bowl combine flour, baking powder, salt and orange zest.
  3. In a separate bowl combine eggs and sugar and beat with an electric mixer for 3 minutes or until the eggs are pale yellow and fall in ribbons, stir in orange juice, butter and vanilla  until well combined.
  4. Stir in the dry ingredients and stir well until it's well combined.
  5. Pour the batter into the muffin cups filling them 2/3 of the way up.
  6. Bake for 13-15 minutes or until the edges start to brown.
  7. Sprinkle the top of each tart with some coarse sugar and place the pans back in the oven.
  8. Turn the oven off and leave them in there for 2 minutes.
  9. Allow the pans to cool for 5 minutes then run a knife around the edge of each tart and gently unmold.

Recipe Tips

Ensure that your butter is completely melted but not hot before mixing it with the other ingredients. Hot butter can cook the eggs and create an undesirable texture in your batter.
When juicing the oranges, be sure to strain the juice to remove any seeds and pulp, resulting in a smoother filling for your tarts that will enhance the overall texture.
Avoid overmixing the batter after adding the flour. Mix just until the dry ingredients are incorporated to prevent the tarts from becoming tough; a few lumps are okay.

Frequently Asked Questions

Can I substitute all-purpose flour with a gluten-free flour blend?

Yes, you can use a gluten-free flour blend instead of all-purpose flour in this recipe. Make sure to choose a blend that is specifically designed for baking to ensure the best texture and rise.

How should I store the leftover orange tarts?

Store the leftover tarts in an airtight container at room temperature for up to 3 days. For longer storage, you can refrigerate them for up to a week or freeze them for up to 3 months. Just make sure to wrap them well to prevent freezer burn.

What should I do if my tarts are not rising properly?

If your tarts are not rising, ensure that your baking powder is fresh and active. Also, be careful not to overmix the batter when combining the wet and dry ingredients, as this can lead to denser tarts. Make sure that your oven is preheated properly before baking as well.

You should add orange juice after you combine dry and wet ingredients.

Hi Krissy, these tarts can be stored in a air tight container in the refrigerator for up to 3 days, and no I would not mail them due to their short shelf life.
