  3. Add the cabbage cut into cubes, than add the sliced carrots and a little water, about a glass and a half.
  4. When it starts boiling, add the remaining spices, coriander, tomato sauce, salt, pepper sauce and ground pepper (to taste), and than add the cooked ribs.
  5. Let it simmer for about 15 minutes, than lastly add the cooked beans (rinsed in water), wait a few minutes and serve.

Recipe Tips

When browning the spareribs, ensure your pan is hot enough to achieve a nice sear without steaming them. This will lock in the juices and add depth of flavor to the dish.
For a deeper flavor profile, consider marinating the spareribs in a mixture of olive oil, garlic, and spices (like paprika or cumin) for a few hours or overnight before cooking.
Avoid overcooking the beans; add them towards the end of the cooking process to keep their texture intact. If using canned beans, simply heat them through in the last 10 minutes of cooking to prevent mushiness.

Frequently Asked Questions

Can I substitute chouriço with another type of sausage?

Yes, you can substitute chouriço with other types of sausages such as kielbasa or spicy Italian sausage. However, keep in mind that this may alter the flavor profile of the dish.

How should I store any leftovers of the spareribs and beans stew?

Allow the stew to cool to room temperature, then transfer it to an airtight container. It can be stored in the refrigerator for up to 3 days or frozen for up to 3 months. To reheat, simply warm it on the stove or in the microwave until heated through.

What can I do if the stew is too salty?

If your stew turns out too salty, you can add a bit of water or low-sodium broth to dilute the saltiness. Alternatively, adding more vegetables or beans can help balance the flavors without losing the dish's integrity.

Recommended Drink Pairings

Portuguese: Alentejo Red - This wine's rich, fruity flavors complement the savory depth of the spareribs and beans.

Beer

Portuguese: Super Bock - This classic lager offers a crisp and refreshing contrast to the rich stew, making it a perfect pairing.

General: Brown Ale - A malty brown ale provides a nutty sweetness that pairs well with the savory elements of the dish.
