  2. Remove the pulp from the oranges and place the shells in the refrigerator.
  3. Mix the gelatin with 6 tablespoons of cold water and let it soften for 10 minutes, then heat it, stirring constantly, until gelatin dissolves.
  4. Mix the egg yolks with two thirds of the sugar until the mixture is creamy.
  5. Stir in the juice of the orange and hot gelatin to the egg yolks and sugar mixture, then refrigerate.
  6. Beat the egg whites and then add the remaining sugar and beat until very firm.
  7. Mix the egg whites and whipped cream with the mixture in the refrigerator.
  8. Place the orange mousse on the cold orange shells and garnish with orange zest.

Recipe Tips

When preparing the gelatin, ensure it is fully dissolved in warm water before adding it to the orange mixture. This prevents any graininess in your mousse and ensures a smooth texture.
To achieve a lighter mousse, beat the heavy cream until soft peaks form before gently folding it into the orange mixture. This incorporates air and creates a fluffier texture, which is key to a successful mousse.
Avoid overcooking the egg mixture when combining it with the sugar and orange juice. Cook it on low heat and remove it from the heat as soon as it thickens slightly to prevent scrambling the eggs, which can ruin the texture of your mousse.

Frequently Asked Questions

Can I substitute gelatin powder with another type of thickening agent?

Yes, you can use agar-agar as a vegetarian alternative to gelatin. Use 1 tablespoon of agar-agar powder mixed with 1/4 cup of water, bringing it to a boil until dissolved. It sets similarly to gelatin.

How should I store any leftover orange mousse?

Leftover orange mousse can be stored in an airtight container in the refrigerator for up to 3 days. However, it is best served fresh to retain its light and creamy texture.

What can I do if my mousse doesn't set properly?

If your mousse doesn't set, it might be due to insufficient gelatin. You can try gently warming the mixture again and adding a little more dissolved gelatin. Make sure to refrigerate it for a longer time to allow it to firm up.
