Ingredients
Cake:4 large eggs3/4 cup (150 g) sugar2 tbsp (20 g) custard powder (such as Bird’s or Maizena Custard)1 ½ cups (180 g) all-purpose flour1 plain creamy yogurt (about 4 oz / 125 g)1/2 cup (125 ml) vegetable oil1 dessert spoon (about 2 tsp / 10 g) baking powder1 yogurt cup (about 4 oz / 125 ml) freshly squeezed orange juiceTopping:Ground cinnamon, to taste1 â…” cups (400 ml) milk1 cinnamon stickPeel of 1 lemon (use only the yellow part)2 tbsp (30 g) margarine or butter3 tbsp (38 g) sugar2 ½ tbsp (about 25 g) custard powder
Directions
Cake:
- Preheat the oven to 375°F (190°C).
- Grease a springform pan with butter and dust with flour.
- In a large bowl, beat the eggs, sugar, yogurt, oil, and orange juice until smooth and creamy.
- Add the flour, custard powder, and baking powder, mixing just until combined.
- Pour the batter into the prepared pan and bake until golden and cooked through (about 30–40 minutes, depending on your oven).
- Tip: test with a toothpick—if it comes out clean, it’s ready.
Topping:
- In a saucepan, combine the milk, cinnamon stick, lemon peel, margarine, sugar, and custard powder.
- Cook over medium heat, stirring constantly, until the cream thickens.
- Remove the cinnamon stick and lemon peel.
- Spread the warm cream evenly over the cooled cake.
- Dust with ground cinnamon before serving.
