Ingredients

Cake:4 large eggs3/4 cup (150 g) sugar2 tbsp (20 g) custard powder (such as Bird’s or Maizena Custard)1 ½ cups (180 g) all-purpose flour1 plain creamy yogurt (about 4 oz / 125 g)1/2 cup (125 ml) vegetable oil1 dessert spoon (about 2 tsp / 10 g) baking powder1 yogurt cup (about 4 oz / 125 ml) freshly squeezed orange juiceTopping:Ground cinnamon, to taste1 â…” cups (400 ml) milk1 cinnamon stickPeel of 1 lemon (use only the yellow part)2 tbsp (30 g) margarine or butter3 tbsp (38 g) sugar2 ½ tbsp (about 25 g) custard powder

Directions

Cake:

  1. Preheat the oven to 375°F (190°C).
  2. Grease a springform pan with butter and dust with flour.
  3. In a large bowl, beat the eggs, sugar, yogurt, oil, and orange juice until smooth and creamy.
  4. Add the flour, custard powder, and baking powder, mixing just until combined.
  5. Pour the batter into the prepared pan and bake until golden and cooked through (about 30–40 minutes, depending on your oven).
  6. Tip: test with a toothpick—if it comes out clean, it’s ready.

Topping:

  1. In a saucepan, combine the milk, cinnamon stick, lemon peel, margarine, sugar, and custard powder.
  2. Cook over medium heat, stirring constantly, until the cream thickens.
  3. Remove the cinnamon stick and lemon peel.
  4. Spread the warm cream evenly over the cooled cake.
  5. Dust with ground cinnamon before serving.
