Directions
- Prep your wings by removing the wing tips, they are the boney pointy bits at the end, then cut through the skin attaching the two limbs and extend the wings out fully.
- Next finely dice the peppers as small as you possibly can (leaving the seeds in for a bit of a kick.and place them into a mixing bowl.
- Finely chop the coriander stalks and garlic and add to the bowl along with the sugar, lemon juice and lemon zest.
- Strip the leaves from the thyme stalks and add to the mix.
- Finish with 2 tbs of olive oil, then season liberally with salt and pepper.
- Now that you have your sauce made, you just need to marinate the wings. You can cook the wings right away but leave marinating overnight.
- When you are ready to get going, get your grill seriously hot by placing all of your coals on one side, allowing you direct heat, and indirect heat.
- Fill the direct heat side of the grill with wings and allow to crisp up nicely. Turn them over and repeat.
- Make sure you have good colour on the wings before transferring them over to the side with no heat. Close the lid of you BBQ and allow to cook for about 25 minutes. This will give you incredibly deep flavour, perfect skin and fall off the bone meat.

Frequently Asked Questions
What can I substitute for piri piri peppers if I can't find them?
You can substitute piri piri peppers with other chili peppers like jalapeños or serranos for a milder kick, or use cayenne pepper or crushed red pepper flakes for a similar spicy flavor without the whole peppers.
How should I store leftover marinated wings or cooked wings?
If you have leftover marinated wings, store them in an airtight container in the refrigerator for up to 2 days. For cooked wings, you can also store them in an airtight container, and they will last in the fridge for 3 to 4 days. You can reheat cooked wings in an oven or on a grill until heated through.
What should I do if the wings are not crispy after grilling?
If your wings are not crispy after grilling, ensure that your grill is hot enough before placing the wings on it. You can also try cooking them over direct heat for a longer period (while turning them frequently) to achieve a better crisp. If they are still not crispy enough, you can broil them in the oven for a few minutes to finish them off.

Beer
Portuguese: Super Bock - This classic Portuguese lager is crisp and refreshing, providing a nice contrast to the spicy wings without overwhelming their flavors.
General: Pale Ale - The hoppy bitterness of a Pale Ale works well to cut through the richness of the chicken wings and complements the spices beautifully.
