2 cups béchamel sauce (500 ml)1 pack of pre-cooked lasagna sheets1 kg (2.2 lbs) of desalted and shredded codfish1 medium eggplant, diced2 onions, chopped2 carrots, grated1 small red bell pepper, chopped1 small yellow bell pepper, chopped300 g (10.5 oz) broccoli, quartered300 g (10.5 oz) cauliflower, quartered3 garlic cloves, mincedOregano to tasteSalt to tasteGround white pepper to tasteOlive oil to tasteGrated cheese to taste

Directions

  1. Preheat the oven to 180°C (350°F).
  2. Sauté all the chopped vegetables in olive oil. 
  3. Add the codfish and let it cook over low heat for 30 minutes, and season to taste.
  4. Spread a little béchamel sauce on the bottom of a baking dish. 
  5. Layer lasagna sheets with the codfish and vegetable mixture.
  6. Finish with a layer of lasagna sheets, cover with béchamel sauce, and sprinkle with grated cheese.
  7. Bake for 30 minutes or until golden and bubbly.
  8. Serve with a fresh salad.
