This baked shrimp pasta delivers a rich, creamy seafood pasta recipe by layering al dente penne with a fresh tomato and herb sauce. The easy shrimp dinner stands out by using a cream cheese base for maximum velvetiness, ensuring the shrimp stay succulent under a golden Parmesan crust. It is a perfect one-pan solution for hosting or a comforting mid-week meal.


Ingredients

500g of penne pasta 1.5kg of large shrimp 1 large onion, finely chopped 2 cloves of garlic, crushed 1 cup of butter 2 tablespoons of olive oil 1/2 bunch of chopped parsley and green onions 4 ripe tomatoes 1 package of cream cheeseParmesan cheese to sprinkle

Directions

  1. Cook the pasta until al dente. Set aside.
  2. Sauté the onion and garlic in olive oil and butter.
  3. Add the chopped parsley, green onions, salt, pepper, and chopped tomatoes (peeled and seeded). Stir and cover the pot until the sauce thickens.
  4. Add the shrimp and let it cook for 10 minutes.
  5. Grease a baking dish with half of the cream cheese, place the cooked penne, and pour the shrimp sauce over it. Spread the remaining cream cheese on top.
  6. Bake in a preheated medium oven at 350°F or 175°C, until the cheese melts (about 10 min). 
  7. Sprinkle with parsley and Parmesan cheese and serve.
