Ingredients

1.5 kg (approx. 3.3 lbs) pork loinSalt, pepper, and oregano to taste1 tablespoon olive oil1 chopped onion2 cloves garlic, minced2 tablespoons tomato paste or homemade tomato sauce3 ripe tomatoes, chopped4 tablespoons chopped green olives

Preparation

  1. Season the meat with salt and pepper.
  2. Heat a pot with olive oil over high heat and brown the meat (about 15 minutes).
  3. Remove and set aside in a dish.
  4. In the same pot, sauté the onion and garlic for 5 minutes or until golden.
  5. Add the tomato paste/sauce and chopped tomatoes and cook for another 2 minutes.
  6. Return the meat to the pot and pour in enough boiling water to cover it.
  7. Cover the pot and cook over low heat for 1 hour and 50 minutes.
  8. Season with salt, pepper, oregano, add the olives, and cook for another 5 minutes.
  9. Turn off the heat, remove the meat, slice it, and serve with the sauce along with a side of rice.
