Ingredients
120 g white sugar (1/2 cup + 1 tbsp)130 g vermicelli pasta (4.6 oz)500 ml semi-skimmed milk, lactose-free (2 cups + 2 tbsp)4 egg yolksPeel of 1/2 lemon1 cinnamon stickGround cinnamon for garnish
Directions
- Place a saucepan over heat with the milk, lemon peel, and cinnamon stick, and bring to a boil.
- Remove from heat, add the sugar, and let it cool slightly.
- Place the yolks in a bowl and break them up with a fork.
- Add the pasta to the milk and return to the heat until it boils, over medium heat, stirring constantly.
- Check the cooking time on the package.
- Remove from heat, add 2 spoonfuls of the pasta to the yolks to temper them, mixing well.
- Mix the yolks into the milk and stir well.
- Return to the heat for 30 seconds to cook the yolks, stirring constantly.
- Pour the vermicelli into a serving dish or individual bowls.
- Sprinkle with cinnamon and serve.
