Sweet Angel Hair Pasta (Aletria) Recipe

Sweet angel hair pasta (aletria) recipe, an embrace of creamy custard, infused with cinnamon and lemon, creating a dessert that is pure bliss.

Ingredients

120 g white sugar (1/2 cup + 1 tbsp)130 g vermicelli pasta (4.6 oz)500 ml semi-skimmed milk, lactose-free (2 cups + 2 tbsp)4 egg yolksPeel of 1/2 lemon1 cinnamon stickGround cinnamon for garnish

Directions

  1. Place a saucepan over heat with the milk, lemon peel, and cinnamon stick, and bring to a boil.
  2. Remove from heat, add the sugar, and let it cool slightly.
  3. Place the yolks in a bowl and break them up with a fork.
  4. Add the pasta to the milk and return to the heat until it boils, over medium heat, stirring constantly.
  5. Check the cooking time on the package.
  6. Remove from heat, add 2 spoonfuls of the pasta to the yolks to temper them, mixing well.
  7. Mix the yolks into the milk and stir well.
  8. Return to the heat for 30 seconds to cook the yolks, stirring constantly.
  9. Pour the vermicelli into a serving dish or individual bowls.
  10. Sprinkle with cinnamon and serve.
