Ingredients

14 oz cooked flaked cod (about 400 g)1 lb 5 oz mashed potatoes (about 600 g)3 hard-boiled eggs, chopped2 carrots, chopped2 large onions, chopped3 ½ tbsp olive oil (about 50 ml)2 tablespoons vinegar1 tablespoon mustard3 garlic cloves, minced3/4 oz chopped parsley (about 20 g)1 egg yolk (for brushing)Extra parsley for garnish

Preparation

  1. Preheat the oven to 400°F (200°C).
  2. In a saucepan, sauté the 2 chopped onions in 3 ½ tablespoons of olive oil, and season with a little salt.
  3. Add the minced garlic and chopped carrots, and season with pepper.
  4. Add the vinegar and mustard, and let everything cook until the vegetables are tender.
  5. Stir in the 3/4 oz (20 g) of chopped parsley.
  6. Spread the cooked vegetable mixture in the base.
  7. Sprinkle with the chopped boiled eggs, then layer the flaked cod on top and drizzle with a little olive oil. Cover with the mashed potatoes.
  8. Brush the top with the egg yolk.
  9. Bake for about 15 minutes, or until lightly golden.
  10. Garnish with extra parsley and serve hot.
