Ingredients
14 oz cooked flaked cod (about 400 g)1 lb 5 oz mashed potatoes (about 600 g)3 hard-boiled eggs, chopped2 carrots, chopped2 large onions, chopped3 ½ tbsp olive oil (about 50 ml)2 tablespoons vinegar1 tablespoon mustard3 garlic cloves, minced3/4 oz chopped parsley (about 20 g)1 egg yolk (for brushing)Extra parsley for garnish

Preparation
- Preheat the oven to 400°F (200°C).
- In a saucepan, sauté the 2 chopped onions in 3 ½ tablespoons of olive oil, and season with a little salt.
- Add the minced garlic and chopped carrots, and season with pepper.
- Add the vinegar and mustard, and let everything cook until the vegetables are tender.
- Stir in the 3/4 oz (20 g) of chopped parsley.
- Spread the cooked vegetable mixture in the base.
- Sprinkle with the chopped boiled eggs, then layer the flaked cod on top and drizzle with a little olive oil. Cover with the mashed potatoes.
- Brush the top with the egg yolk.
- Bake for about 15 minutes, or until lightly golden.
- Garnish with extra parsley and serve hot.
