3 eggs2/3 cup sugar (120 g)1 1/4 cups Greek yogurt or plain natural yogurt (300 g)1/3 cup + 1 tablespoon cornstarch (50 g)1 teaspoon baking powder1 teaspoon vanilla extract9 inch tart pan, buttered and floured

Preparation
- Preheat the oven to 340°F (170°C).
- Separate the eggs, place whites in one bowl, yolks in another.
- Beat the egg whites until stiff peaks form.
- In the other bowl, combine the sugar with egg yolks.
- Beat with an electric mixer until the mixture is pale and fluffy.
- Add the yogurt and mix until smooth.
- Sift in the cornstarch, then beat again until fully incorporated.
- Gently fold in the beaten egg whites, using a spatula and lifting from the bottom up to avoid deflating the mixture.
- Stir in the vanilla and baking powder.
- Pour the batter into the prepared cake pan.
- Bake for about 40 minutes. (Do not open the oven door during the first 30 minutes.)
- Let cool slightly before unmolding.
