4 small apples2 eggs3/4 cup granulated sugar (150g)1/4 cup Port wine1/3 cup softened vegetable margarine (80g)3 tablespoons apple jam1 ½ cups all-purpose flour (180g)1 teaspoon baking powderShredded coconut, to taste

Directions

  1. Preheat the oven to 350°F (180°C).
  2. Grease a round tart pan with margarine, line it with parchment paper, and grease the paper as well, and set aside.
  3. Peel and core the apples, finely chop two of them, slice the other two and set aside.
  4. In a large bowl, beat the eggs with the sugar until well combined.
  5. Add the Port wine, softened margarine, chopped apples, and apple jam, and beat again until smooth.
  6. Add the flour and baking powder and mix just until fully incorporated.
  7. Pour the batter into the prepared pan.
  8. Generously sprinkle with shredded coconut and arrange the apple slices randomly over the top.
  9. Bake for about 30 minutes, or until a toothpick inserted in the center comes out clean.
  10. Remove from the oven and let cool before serving.
