500 ml milk (about 2 cups)2 heaping tablespoons cornstarch (Maizena)2 large eggs2 packets mandarin or tangerine flavored instant pudding mix (about 100 g total)6 tablespoons granulated sugar (75 g)1 package Philadelphia cream cheese (200 g / 7 oz), or similar2 tsp vanilla extract + 1 tbsp sugar8-inch (20 cm) round cake pan, well buttered and lined with parchment paper
Directions
- Preheat your oven to 180 °C (350 °F).
- In a blender, combine the milk, cornstarch, eggs, pudding mixes, sugar, cream cheese, and vanilla sugar.
- Blend until completely smooth and lump-free (about 30 seconds to 1 minute).
- Pour the batter into the prepared 8-inch pan.
- Place in the preheated oven and bake until the top is lightly golden and the center is set to the touch (about 35 minutes).
- Remove from oven and let cool to room temperature, then refrigerate (ideally overnight) to chill and firm up.
- To serve, run a thin knife around the edge, invert onto a plate, peel off the parchment, slice, and enjoy!
