500 ml milk (about 2 cups)2 heaping tablespoons cornstarch (Maizena)2 large eggs2 packets mandarin or tangerine flavored instant pudding mix (about 100 g total)6 tablespoons granulated sugar (75 g)1 package Philadelphia cream cheese (200 g / 7 oz), or similar2 tsp vanilla extract + 1 tbsp sugar8-inch (20 cm) round cake pan, well buttered and lined with parchment paper

Directions

  1. Preheat your oven to 180 °C (350 °F).
  2. In a blender, combine the milk, cornstarch, eggs, pudding mixes, sugar, cream cheese, and vanilla sugar.
  3. Blend until completely smooth and lump-free (about 30 seconds to 1 minute).
  4. Pour the batter into the prepared 8-inch pan.
  5. Place in the preheated oven and bake until the top is lightly golden and the center is set to the touch (about 35 minutes).
  6. Remove from oven and let cool to room temperature, then refrigerate (ideally overnight) to chill and firm up.
  7. To serve, run a thin knife around the edge, invert onto a plate, peel off the parchment, slice, and enjoy!
