Ingredients

5 large eggs (250g)2 ½ cups or 225g shredded coconut (unsweetened)â…” cup or 135g sugar3 tablespoons or 45g orange jam1 9x2 inch or 23x5 cm tart pan

Directions

  1. Preheat the oven to 350°F (180°C).
  2. Line a 9x2 inch (23x5 cm) tart pan with parchment paper.
  3. Beat the eggs with the sugar using a whisk until fully incorporated without overbeating.
  4. Add the orange jam and mix until smooth.
  5. Fold in the shredded coconut and stir until you achieve a homogeneous mixture.
  6. Pour into the prepared pan and bake for about 25 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.
  7. Remove from the oven, allow to cool completely in the pan, and unmold.
