Ingredients
1 sheet of puff pastry (for pie)280 g (10 oz) canned white beans (1 small can)350 g (1 1/3 cups) sugar80 g (2/3 cup) all-purpose flour80 g (1/3 cup) margarine5 eggs100 g (1 cup) shredded coconutZest of 1/2 lemonExtra sugar for sprinkling
Directions
- Preheat the oven to 180°C (350°F).
- Roll out the puff pastry and place it into a pie pan and prick the base with a fork and set aside.
- Drain and rinse the canned white beans thoroughly and mash or purée the beans until smooth.
- In a large bowl, combine the bean purée with the remaining ingredients (sugar, flour, margarine, eggs, coconut, and lemon zest).
- Mix very well until the batter is completely smooth.
- Pour the batter into the pie pan, sprinkle with sugar, and bake for about 35 minutes or until golden brown.
