Directions

  1. Place the milk in a saucepan and heat it with the lemon zest until it’s almost boiling.
  2. In a mixing bowl, whisk the egg yolks with the cornstarch and sugar until smooth.
  3. Pour a small amount of the hot milk into the egg yolk mixture while whisking vigorously to prevent lumps. Gradually add the rest of the hot milk, continuing to whisk well.
  4. Return the mixture to the saucepan and cook over medium-low heat, stirring constantly, until it thickens and starts to bubble.
  5. Allow the cream to cool slightly. Divide the cream into small bowls or glasses, filling them halfway. Add a layer of crumbled Maria biscuits, then top with more cream.
  6. Garnish with pine nuts or another topping of your choice.
  7. Dust with powdered sugar if desired and serve.

Tip:

If you prefer a more intense lemon flavor, you can add the juice of half a lemon to the cream.

Recipe Tips

To prevent the egg yolks from scrambling when combined with the hot milk, temper the yolks by slowly adding a small amount of the warm milk to the yolks while whisking continuously, then gradually add the yolk mixture back into the pot.
For a richer flavor, consider infusing the milk with a cinnamon stick or vanilla pod by simmering them in the milk before straining them out, enhancing the overall taste of the cream.
When crumbling the Maria biscuits, ensure they are finely crushed to allow for even distribution and texture in the cream. Avoid using stale biscuits as they may not blend well and could affect the consistency.

Frequently Asked Questions

Can I use a different type of milk for this recipe?

Yes, you can substitute whole milk with almond milk, coconut milk, or any other plant-based milk. However, be aware that this may slightly alter the flavor and creaminess of the final product.

How should I store the leftover cream?

Store any leftover cream in an airtight container in the refrigerator for up to 3 days. Make sure to cover the surface with plastic wrap to prevent a skin from forming.

What can I do if my cream doesn't thicken properly?

If your cream doesn't thicken, ensure that you cooked it on medium-low heat and stirred constantly. If it’s still too runny, you can return it to the heat and gently simmer while stirring until it thickens. Adding a touch more cornstarch mixed with a bit of milk can also help thicken the mixture.
