With all your ingredients and equipment gathered, you are ready to get started!

Directions

  1. Preheat the oven to 350°F (180°C).
  2. Place the cooked chickpeas in a blender or food processor and puree until smooth.
  3. In a bowl, mix together the sugar, flour, chickpea puree, eggs, egg yolks, melted margarine, lemon zest, and cinnamon (if desired).
  4. Stir well until the mixture is smooth and well combined.
  5. Roll out the puff pastry and fit it into a pie pan, keeping the parchment paper under the dough to avoid greasing the pan.
  6. Prick the bottom of the pastry with a fork.
  7. Pour the chickpea filling over the pastry.
  8. Generously sprinkle powdered sugar over the top—this will help create a crispy surface as it bakes.
  9. Bake for about 30 minutes, or until the top is golden and crispy.

Recipe Tips

Ensure the puff pastry is fully thawed before using; if it's too cold, it won't roll out properly and may result in a tough crust. Let it sit at room temperature for about 30 minutes.
For a unique flavor twist, consider adding spices such as cinnamon or nutmeg to the chickpea mixture; start with 1/4 teaspoon and adjust to taste for a warm, aromatic profile.
Avoid overmixing the chickpea and egg mixture; blend until just combined to maintain a light texture. Overmixing can lead to a denser tart that won't rise as it should during baking.

Frequently Asked Questions

Can I substitute chickpeas with another type of bean?

Yes, you can substitute chickpeas with other legumes such as white beans or black beans, but the flavor and texture may vary slightly. Make sure to cook and puree them to a smooth consistency before adding to the filling.

How should I store leftovers of the Chickpea Tart?

Store any leftover Chickpea Tart in an airtight container in the refrigerator for up to 3 days. To maintain its crispiness, you can reheat it in the oven at a low temperature before serving.

My tart filling is too runny; what can I do to fix it?

If your filling is too runny, try adding an extra tablespoon of flour to help thicken it. You can also let it sit for a few minutes to allow the flour to absorb moisture before pouring it into the pastry.

Recommended Drink Pairings

Wine

Portuguese: Vinho Verde - This light and slightly effervescent wine complements the chickpeas and citrus notes in the tart beautifully.

General: Sauvignon Blanc - A crisp and aromatic Sauvignon Blanc will enhance the flavors of lemon zest and balance the sweetness of the tart.

Beer

Portuguese: Super Bock - This refreshing lager is light enough to not overpower the dish while providing a nice contrast to the sweetness of the tart.

General: Pilsner - A classic Pilsner, with its clean and crisp profile, pairs well by cutting through the richness of the pastry and the filling.

Other Beverages

Lemon Iced Tea: This refreshing beverage ties in beautifully with the lemon zest in the tart, providing a cooling contrast to its sweetness.
