Recipe Tips

To prevent the puff pastry from becoming soggy, pre-bake it for 10 minutes at 400°F (200°C) before adding the apple filling. This will create a barrier and help maintain its crispness.
When selecting apples, use a mix of tart and sweet varieties, such as Granny Smith and Honeycrisp, to add depth of flavor to your tart. Be sure to slice them evenly for consistent cooking.
Avoid overmixing the egg mixture after adding the cornstarch, as this can incorporate too much air and lead to a puffy, uneven texture in the filling. Mix just until combined for a smooth, creamy consistency.

Frequently Asked Questions

What can I substitute for puff pastry in this recipe?

You can use a shortcrust pastry or a homemade pie crust as a substitute for puff pastry. If you're looking for a gluten-free option, consider using a gluten-free pie dough.

How should I store leftover apple and cinnamon tart?

Leftover tart can be stored in the refrigerator, covered with plastic wrap or aluminum foil, for up to 3 days. To maintain the crispness of the crust, reheat in the oven before serving.

What should I do if my tart filling doesn't set properly after baking?

If the filling doesn't set, it could be due to insufficient baking time or too much liquid. Make sure to bake until the center is just set and slightly jiggly; it will continue to firm up as it cools. Consider adding a bit more cornstarch next time if it's too runny.

Beer

Portuguese: Super Bock - This lager offers a crisp and refreshing contrast to the rich and sweet tart, making it a great pairing.

General: Amber Ale - The maltiness of an amber ale harmonizes with the caramelized sugar and spices in the tart, enhancing the overall experience.
