4 chicken legs with thighs (approx. 1 kg / 2.2 lbs)4 medium sweet potatoes (approx. 800g / 1.75 lbs), cut into sticks4 cloves of garlic, minced3 tablespoons (45 ml) olive oil1 tablespoon (15 ml) vegetable oil1 tablespoon (15 ml) lemon juice1 teaspoon (2g) red pepper flakes1 pinch of paprikaPiri-piri sauce, to tasteSalt and black pepper, to tasteOlive oil, as needed for frying

Directions
- Combine the 3 tablespoons of olive oil, vegetable oil, lemon juice, paprika, minced garlic, red pepper flakes, piri-piri sauce, salt, and pepper in a mortar and pestle or food processor.
- Process the mixture thoroughly until it forms a cohesive, vibrant marinade.
- Pat the chicken legs completely dry with paper towels then coat them generously with the prepared piri-piri marinade.
- Heat a splash of olive oil in a skillet over high heat and sear the chicken for about 6 minutes per side until the skin is deeply browned.
- Transfer the seared chicken to a baking tray and cover tightly with aluminum foil.
- Roast in a preheated oven at 400°F (200°C) for 30 minutes.
- Remove the foil, flip the chicken pieces, and roast uncovered for another 10-15 minutes to crisp the skin.
- Fry the sweet potato sticks in hot oil while the chicken finishes baking until they are golden and crispy.
- Drain the fries on kitchen paper towels and season immediately with salt.
- Serve the succulent piri piri chicken alongside the crispy sweet potato fries and a fresh side salad.
