Ingredients

4 chicken legs with thighs (approx. 1 kg / 2.2 lbs)4 medium sweet potatoes (approx. 800g / 1.75 lbs), cut into sticks4 cloves of garlic, minced3 tablespoons (45 ml) olive oil1 tablespoon (15 ml) vegetable oil1 tablespoon (15 ml) lemon juice1 teaspoon (2g) red pepper flakes1 pinch of paprikaPiri-piri sauce, to tasteSalt and black pepper, to tasteOlive oil, as needed for frying

Directions

  1. Combine the 3 tablespoons of olive oil, vegetable oil, lemon juice, paprika, minced garlic, red pepper flakes, piri-piri sauce, salt, and pepper in a mortar and pestle or food processor.
  2. Process the mixture thoroughly until it forms a cohesive, vibrant marinade.
  3. Pat the chicken legs completely dry with paper towels then coat them generously with the prepared piri-piri marinade.
  4. Heat a splash of olive oil in a skillet over high heat and sear the chicken for about 6 minutes per side until the skin is deeply browned.
  5. Transfer the seared chicken to a baking tray and cover tightly with aluminum foil.
  6. Roast in a preheated oven at 400°F (200°C) for 30 minutes.
  7. Remove the foil, flip the chicken pieces, and roast uncovered for another 10-15 minutes to crisp the skin.
  8. Fry the sweet potato sticks in hot oil while the chicken finishes baking until they are golden and crispy.
  9. Drain the fries on kitchen paper towels and season immediately with salt.
  10. Serve the succulent piri piri chicken alongside the crispy sweet potato fries and a fresh side salad.
