Yum Carrot Cake with Chocolate Frosting Recipe

Yum carrot cake with chocolate frosting (bolo de cenoura com cobertura), a moist cake made with carrots, topped with a melted chocolate frosting.

Ingredients

4 raw carrots (peeled and sliced)3 eggs2 cups of sugar3 cups of all-purpose flour1 cup of vegetable oil1 tablespoon of baking powder7 oz or 200g of culinary chocolate1 tablespoon of butter

Directions

  1. Preheat the oven to 350°F (180°C).
  2. In a blender, add the carrots, eggs, and oil and blend everything very well.
  3. Pour the mixture into a bowl, add the sugar, and mix well using a whisk.
  4. Add the flour and baking powder and beat until you have a smooth mixture.
  5. Pour the batter into a greased and floured pan and bake for 30 to 40 minutes.
  6. Check with a toothpick; once it comes out clean, remove the cake.
  7. Let it cool slightly and then remove it from the pan.
  8. Meanwhile, prepare the chocolate topping.
  9. Add butter to the chocolate, and melt in the microwave.
  10. Once the cake has cooled, spread the chocolate cream on top and decorate as desired.
