With all your ingredients and equipment gathered, you are ready to get started!

Directions

  1. Start by crushing the garlic well with the chili peppers, then mix in all the ingredients except the salt.
  2. After thoroughly cleaning the chicken, grill it whole over a good heat source (preferably electric or charcoal).
  3. When the fat starts to melt and drip, sprinkle the chicken with salt on both sides and continue grilling (since the chicken is tender, it will cook quickly).
  4. When it turns golden brown, brush it with the sauce and leave it on the grill for another 1 to 2 minutes.
  5. Remove it, cut it into pieces, and brush it with a bit more sauce.
  6. Serve with a tomato salad and fries.

Recipe Tips

For maximum flavor, marinate the chicken for at least 4 hours or overnight. This allows the spices and the acidity from the lemon juice to penetrate the meat deeply, enhancing its taste.
When grilling, avoid flipping the chicken too frequently. Let it cook undisturbed for at least 5-7 minutes on each side to achieve a nice char and prevent it from drying out.
Be cautious with the amount of chili peppers you use. Start with just 2 if you're unsure about the heat level, as you can always add more spice later with hot sauce or by serving with a spicy dipping sauce.

Frequently Asked Questions

Can I substitute the chili peppers with another type of pepper?

Yes, you can substitute the piri-piri chili peppers with other types of chili peppers such as jalapeños or serranos if you prefer a milder flavor. Adjust the quantity based on your heat tolerance.

How should I store leftover grilled chicken?

Leftover grilled chicken should be stored in an airtight container in the refrigerator and can be kept for 3 to 4 days. For longer storage, you can freeze it; just ensure it’s wrapped well to avoid freezer burn.

What should I do if my chicken is not cooking evenly on the grill?

If your chicken is not cooking evenly, check the heat of your grill; it might be too hot in some areas. You can also turn the chicken occasionally to ensure it cooks uniformly, and if it's browning too quickly, move it to a cooler part of the grill.

Recommended Drink Pairings

Wine

Portuguese: Vinho Verde - This light and refreshing wine offers a slight effervescence that complements the spicy and garlicky flavors of the grilled chicken.

General: Sauvignon Blanc - The crisp acidity and citrus notes of Sauvignon Blanc enhance the zesty lemon and chili elements in the dish.

Beer

Portuguese: Super Bock - This popular lager has a balanced flavor profile that refreshes the palate, making it a great match for spicy grilled chicken.

General: Pale Ale - The hoppy bitterness and fruity undertones of a Pale Ale can beautifully contrast the heat from the chili peppers.

Other Beverages

Coffee: A smooth, medium roast coffee can provide a rich, comforting counterpoint to the spicy and savory elements of the dish.
