Recipe Tips

Make sure the butter is softened to room temperature before creaming it with the sugar; this will ensure a light and fluffy texture in your cookies. Avoid using melted butter as it can lead to dense cookies.
To enhance the coffee flavor, consider adding a teaspoon of espresso powder in addition to the instant coffee. This will deepen the coffee notes and make the cookies even more aromatic.
Don't overmix the dough once you add the flour; mix just until combined to prevent the cookies from becoming tough. Overmixing develops the gluten in the flour, leading to a chewier rather than a tender cookie.

Frequently Asked Questions

What can I use as a substitute for butter in this recipe?

You can substitute butter with an equal amount of coconut oil, margarine, or vegetable shortening. For a dairy-free option, use a plant-based butter that is suitable for baking.

How should I store the cookies to keep them fresh?

Store the cookies in an airtight container at room temperature for up to one week. For longer storage, you can freeze them in a single layer on a baking sheet, then transfer them to a zip-lock bag for up to three months.

My cookies didn't crack as shown in the photo. What went wrong?

If your cookies didn't crack, it might be due to the dough being too wet or not enough baking powder. Ensure you accurately measure your ingredients and give the dough enough resting time in the refrigerator. Also, try flattening the balls slightly before baking.
