Ingredients

1.76 lbs (800 g) monkfish, cut into pieces1 medium onion, chopped4 ripe tomatoes, peeled and chopped1/2 green bell pepper, finely chopped1/2 red bell pepper, finely chopped2 cloves garlic, minced2 bay leaves1 fish bouillon cube3/4 cup (6.8 fl oz or 2 dl) olive oil1/2 cup (4 fl oz) white wine0.88 lbs (400 g) clams12 shrimp0.84 lbs (380 g) rice4 1/4 cups (1 liter) water1 small bunch cilantro or parsley, choppedSalt, to tastePepper, to taste

Get Portuguese ingredients

Preparation

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion, minced garlic, chopped red and green bell peppers, and bay leaves and stir and let sauté for 5 minutes.
  3. Add the tomatoes and let them cook for another 5 minutes.
  4. Once everything is sautéed, add the monkfish.
  5. Season with salt and pepper.
  6. Add the fish bouillon cube and pour in the white wine and bring to a boil.
  7. Once it starts to boil, turn the monkfish and let it cook for another 5 minutes.
  8. Add the water and bring it to a boil.
  9. Once boiling, add the rice and let it cook for 10 minutes.
  10. Add the shrimp and clams and cook for another 7 minutes.
  11. Once everything is cooked, turn off the heat.
  12. Add the chopped cilantro or parsley, stir everything together, and serve.
